Ingredients

  • 12 ears fresh corn on the cob
  • 1 cup sugar
  • 1 cup milk
  • 0.25 cup unsalted butter, melted
  • 0.5 teaspoon salt
  • 24 pieces corn husks

Directions

Step 1

Carefully peel the corn, removing the husks in whole pieces, and set them aside. Clean the silk from the corn kernels.

Step 2

Using a large knife, cut the kernels from the cob into a large bowl.

Step 3

In a blender, puree the corn kernels with the milk until smooth. Depending on the size of your blender, this may need to be done in batches.

Step 4

Pour the corn-milk mixture into a large bowl and stir in the sugar, melted butter, and salt until well combined.

Step 5

Submerge the reserved corn husks in hot water for about 10 minutes to make them pliable.

Step 6

Take two husks and overlap them slightly to form a wider wrapping. Spoon about 1/2 cup of the corn mixture onto the center of the husks.

Step 7

Fold the sides of the husks over the filling, then fold the bottom up over the filling. Finally, fold the top down to form a secure package. Tie the pamonha with kitchen twine or thin strips of corn husk.

Step 8

Repeat with the remaining corn mixture and husks.

Step 9

In a large, deep pot, bring plenty of water to a boil. Carefully place the pamonhas into the water, ensuring they are fully submerged. Cover and cook for 60 minutes.

Step 10

After cooking, remove the pamonhas from the pot with tongs and let them cool slightly before serving.
