Ingredients

  • 2 pieces Chicken breasts
  • 12 oz Spaghetti
  • 4 cups Chicken broth
  • 1 can Cream of mushroom soup
  • 1 can Cream of chicken soup
  • 1 can Diced tomatoes with green chilies
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 2 cups Cheddar cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Place the chicken breasts in a large pot and add the chicken broth. Bring to a boil, then reduce heat to a simmer and cook for 20 minutes or until the chicken is fully cooked.

Step 2

Remove the chicken from the pot and shred it using two forks. Set aside and reserve the chicken broth for later.

Step 3

Cook the spaghetti in the reserved chicken broth (add extra water if necessary) according to package instructions. Drain and set aside.

Dice the green bell pepper and yellow onion. Heat olive oil in a skillet over medium heat, then sauté the bell pepper and onion until softened, about 5 minutes.

In a large mixing bowl, combine the shredded chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, sautéed bell pepper and onion, 1 cup of cheddar cheese, salt, and black pepper. Mix well.
