Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 cup buttermilk
  • 1 egg
  • 1.5 teaspoons vanilla extract
  • 0.5 cups unsalted butter, melted and slightly cooled
  • 1.5 cups mixed fresh or frozen fruits (blueberries, raspberries, chopped strawberries, etc.)
  • 2 tablespoons optional coarse sugar for topping

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

Step 3

In another bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter until well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter will be slightly lumpy.

Step 5

Fold in the mixed fruits carefully to distribute them evenly throughout the batter.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. For extra sweetness and a crunchy top, sprinkle coarse sugar over each muffin (optional).

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy your homemade Pammy's Fruity Muffins!
