Ingredients

  • 2 pounds Ground beef
  • 1 large Yellow onion, diced
  • 1 medium Red bell pepper, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Diced tomatoes with juice
  • 15 ounces Tomato sauce
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Black beans, drained and rinsed
  • 3 tablespoons Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoons Cayenne pepper (optional for extra heat)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Beef broth (optional for thinning, if needed)
  • 0.5 cups Shredded cheddar cheese (for garnish)
  • 0.5 cups Sour cream (for garnish)
  • 0.25 cups Chopped green onions (for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon or spatula as it cooks. Drain any excess grease.

Step 2

Add the diced onion, red bell pepper, and minced garlic to the skillet with the cooked ground beef. Sauté for 3-4 minutes until the vegetables have softened slightly.

Step 3

Transfer the beef and vegetable mixture to your crock pot.

Step 4

Add the diced tomatoes (with their juice), tomato sauce, kidney beans, black beans, chili powder, ground cumin, paprika, cayenne pepper (if using), salt, and black pepper to the crock pot. Stir everything together to combine.

Step 5

If you'd like a thinner chili, add in the beef broth a little at a time until your desired consistency is reached.

Step 6

Cover the crock pot with the lid and set it to cook on LOW for 6-8 hours, or HIGH for 3-4 hours. Stir occasionally if possible.

Step 7

Once the chili has finished cooking, taste and adjust the seasonings as needed.

Step 8

Serve hot in bowls, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped green onions for garnish. Enjoy!
