Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground beef (80% lean)
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 4 cloves garlic, minced
  • 28 ounces diced tomatoes (canned, with juices)
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 15 ounces black beans (canned, rinsed and drained)
  • 15 ounces pinto beans (canned, rinsed and drained)
  • 2 tablespoons chili powder
  • 1.5 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons ground cayenne pepper
  • 1 teaspoon oregano (dried)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)
  • 0.5 cup shredded cheddar cheese (optional, for serving)

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes. Drain any excess fat if needed.

Step 3

Add the diced onion, red bell pepper, green bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

Step 4

Stir in the chili powder, cumin, smoked paprika, cayenne pepper, oregano, salt, and black pepper. Cook for another 1-2 minutes to toast the spices.

Step 5

Add the canned diced tomatoes (with their juices) and tomato paste to the pot. Stir well to combine.

Step 6

Pour in the beef broth and bring the mixture to a gentle boil.

Step 7

Reduce the heat to low and simmer uncovered for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Add the black beans and pinto beans to the pot and stir to incorporate. Continue to simmer for an additional 15-20 minutes, allowing the flavors to meld.

Step 9

Taste the chili and adjust the seasoning as needed with more salt or spices.

Step 10

Serve the chili hot, garnished with fresh cilantro if desired. For extra indulgence, top with a dollop of sour cream and a sprinkle of shredded cheddar cheese.
