Ingredients

  • 1 pound Ground beef
  • 1 cup Cooked white rice
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 large Egg
  • 0.5 cup Breadcrumbs
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 cups Tomato sauce
  • 1 cup Beef broth
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine the ground beef, cooked rice, finely chopped onion, minced garlic, egg, breadcrumbs, parsley, salt, black pepper, and paprika. Mix thoroughly using your hands or a spoon until the ingredients are evenly combined.

Step 2

Roll the mixture into 1- to 1.5-inch meatballs, placing them on a plate or tray. You should end up with approximately 16-20 meatballs depending on the size.

Step 3

In a large skillet or sauté pan, heat the olive oil over medium heat. Once hot, add the meatballs in batches (avoid overcrowding the pan) and brown them on all sides, about 2 minutes per side. Remove the browned meatballs and set them aside on a plate.

Step 4

In the same pan, pour in the tomato sauce and beef broth. Stir well, scraping the bottom of the pan to deglaze and incorporate any browned bits for added flavor.

Step 5

Bring the sauce to a gentle simmer. Carefully add the browned meatballs back into the pan, spooning some of the sauce over the top.

Step 6

Cover the pan and let the meatballs simmer in the sauce for 25-30 minutes, occasionally checking to ensure they are cooking evenly and the sauce isn't sticking to the bottom.

Step 7

Remove the lid and simmer for an additional 5 minutes if you prefer a slightly thicker sauce.

Step 8

Serve the rice meatballs hot, garnished with additional fresh parsley if desired. They pair wonderfully with steamed vegetables, mashed potatoes, or a fresh side salad.
