Ingredients

  • 6 medium-sized russet potatoes
  • 4 tablespoons unsalted butter
  • 1 medium, diced onion
  • 2 cloves, minced garlic
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.25 cup chopped green onions
  • 4 slices, crumbled (optional) cooked bacon

Directions

Step 1

Peel and dice the russet potatoes into small cubes and set aside.

Step 2

In a large pot, melt the butter over medium heat. Once melted, add the diced onion and cook until translucent, about 5 minutes.

Step 3

Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.

Step 4

Sprinkle the flour into the pot and whisk continuously for 1-2 minutes to form a roux. This will help thicken the soup.

Step 5

Slowly pour in the broth, whisking constantly to prevent lumps. Bring the mixture to a boil.

Step 6

Add the diced potatoes, salt, and black pepper. Reduce the heat to medium-low, cover the pot, and let the potatoes simmer for 20 minutes, or until they are tender and can be easily pierced with a fork.

Step 7

Using an immersion blender, partially blend the soup to your desired texture. If you prefer a chunkier soup, only blend half of the potatoes.

Step 8

Stir in the heavy cream and milk. Heat the soup for an additional 5 minutes, but do not let it boil.

Step 9

Remove the pot from the heat and stir in the shredded cheddar cheese until melted and fully incorporated.

Step 10

Taste and adjust the seasoning with additional salt or pepper, if needed.

Step 11

Ladle the soup into bowls and garnish with chopped green onions, crumbled bacon, and additional shredded cheddar cheese, if desired.

Step 12

Serve hot and enjoy!
