  • 4 pounds Russet potatoes

  • 2 teaspoons Salt

  • 1.5 cups Shredded cheddar cheese
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Panko breadcrumbs
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into 2-inch chunks for even cooking.

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt.

Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until fork-tender.
