Season the chicken thighs with salt and pepper on both sides.
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken thighs and sear them for 4-5 minutes on each side until golden brown. Remove the chicken from the pot and set aside.
In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
Add the tomato paste and cook for 2-3 minutes, stirring constantly, until it deepens in color and melds with the onions.
Pour in the crushed tomatoes and chicken broth, stirring to combine. If you prefer a creamier stew, stir in the peanut butter at this stage.
Add the curry powder, paprika, and chili powder (if using). Stir well to evenly distribute the spices.

If using spinach or kale, stir it into the stew during the last 5 minutes of cooking to wilt it slightly.
