Ingredients

  • 400 grams hearts of palm
  • 250 grams cherry tomatoes
  • 1 large cucumber
  • 0.5 red onion
  • 15 grams fresh parsley
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Drain and rinse the hearts of palm under cold water. Pat them dry with a paper towel and slice them into 1/2-inch thick rounds. Set aside.

Step 2

Wash and halve the cherry tomatoes. Transfer them to a large salad bowl.

Step 3

Peel the cucumber, if desired, and dice it into bite-sized pieces. Add to the salad bowl.

Step 4

Thinly slice the red onion and add it to the bowl with the tomatoes and cucumber.

Finely chop the parsley leaves and sprinkle them over the vegetables in the salad bowl.
