Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 0.33 cup mayonnaise
  • 0.33 cup diced pimentos, drained
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons scallions, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

Heat a large skillet over medium heat and add olive oil and butter. Once the butter is melted and sizzling, add the chicken breasts.

Step 3

Cook the chicken for 5-6 minutes per side, or until golden brown and fully cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside on a plate, tenting with foil to keep warm.

Step 4

In a medium bowl, combine shredded cheddar cheese, cream cheese, mayonnaise, pimentos, garlic powder, and onion powder. Mix well until smooth and creamy to create the pimento cheese sauce.

Step 5

Reduce the skillet heat to low and pour the pimento cheese mixture into the same skillet. Stir gently until the cheese is fully melted and the mixture is smooth, about 2-3 minutes.

Step 6

Place the cooked chicken breasts back into the skillet, spooning some of the pimento cheese sauce over each piece to coat.

Step 7

Cook for an additional 2-3 minutes to allow the chicken to absorb some of the flavors, then remove from heat.

Step 8

Sprinkle chopped scallions over the plated chicken and serve immediately with your choice of side dishes, such as mashed potatoes, rice, or steamed vegetables.
