Ingredients

  • 500 grams Large shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 4 cloves Garlic (finely minced)
  • 200 grams Cherry tomatoes (halved)
  • 125 milliliters Dry white wine
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 loaf Crusty bread (for serving, optional)

Directions

Step 1

Rinse the shrimp under cold water, pat them dry with a paper towel, and set aside.

Step 2

Heat the olive oil and butter in a large skillet over medium heat until the butter is melted and frothy.

Step 3

Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant. Be careful not to let it burn.

Step 4

Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

In the same skillet, add the halved cherry tomatoes and sauté for 2 minutes, stirring occasionally, until they start to soften.

Step 6

Pour the white wine into the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Step 7

Add the lemon juice, fresh thyme leaves, salt, and black pepper to the skillet. Stir to combine and let the sauce simmer for 3-4 minutes to allow the flavors to meld.

Step 8

Return the cooked shrimp to the skillet and toss gently in the sauce to coat. Cook for an additional 1-2 minutes to reheat the shrimp.

Step 9

Sprinkle the dish with freshly chopped parsley and remove it from the heat.

Step 10

Serve immediately, either as a standalone dish or with crusty bread for dipping in the flavorful sauce.
