Ingredients

  • 4 cups Water
  • 0.5 cups Sugar
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground cardamom
  • 1 cup Fresh apricots, pitted and diced
  • 1 cup Fresh peaches, pitted and diced
  • 1 cup Fresh figs, quartered
  • 1 cup Red seedless grapes, halved
  • 2 tablespoons Fresh mint leaves for garnish

Directions

Step 1

In a medium saucepan, combine the water, sugar, lemon juice, ground cinnamon, and ground cardamom.

Step 2

Bring the mixture to a boil over medium heat, stirring occasionally until the sugar is completely dissolved. This will take about 5 minutes.

Step 3

Reduce the heat to low and let the mixture simmer for another 5 minutes to allow the spices to infuse.

Step 4

Remove the saucepan from the heat and set it aside to cool to room temperature.

Step 5

While the syrup is cooling, prepare the fruits by washing, pitting, and chopping the apricots, peaches, figs, and grapes.

Step 6

Once the syrup has cooled, combine it with the prepared fruits in a large mixing bowl. Stir gently to ensure the fruits are evenly coated with the syrup.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Step 8

Before serving, give the soup a gentle stir. Serve chilled in individual bowls, garnished with fresh mint leaves on top.
