Ingredients

  • 250 grams pork fat (lard) or duck fat
  • 2 medium onions
  • 2 garlic cloves
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon optional: smoked paprika

Directions

Step 1

1. Prepare the pork or duck fat by cutting it into small cubes if not already rendered. If rendered fat is being used, ensure it is at room temperature for ease of use.

Step 2

2. Peel and finely dice the onions. Mince the garlic cloves.

Step 3

3. In a medium skillet or frying pan, heat the fat over medium-low heat until fully melted and shimmering.

Step 4

4. Add the diced onions to the pan and stir gently to coat them in the fat. Cook over low heat, stirring occasionally, for 20–25 minutes until the onions are soft, golden-brown, and caramelized.

Step 5

5. Add the minced garlic, fresh thyme leaves, sea salt, black pepper, and smoked paprika (if using). Stir well and cook for an additional 3–5 minutes until the garlic is soft and fragrant.

Step 6

6. Remove the pan from heat and allow the mixture to cool slightly, about 5 minutes.

Step 7

7. Transfer the Zwiebelschmalz mixture into a heatproof container or jar. Allow it to cool completely to room temperature, then cover and refrigerate until solidified, about 2–3 hours.

Step 8

8. Serve as a spread on Paleo-friendly bread, crackers, or vegetable slices. The Zwiebelschmalz can be stored in the refrigerator for up to 2 weeks.
