Wash and peel the carrots. Cut them into sticks or slices, depending on your preference, ensuring they are uniform in size for even pickling.
Peel and lightly smash the garlic cloves to release their flavor.
In a small saucepan, combine water, apple cider vinegar, honey, and sea salt. Heat the mixture over medium heat, stirring occasionally, until the honey and salt are fully dissolved. Remove from heat and let it cool slightly.
Place the cut carrots into a clean glass jar or jars (mason jars work well). Add the smashed garlic cloves, dill sprigs, red chili flakes, and black peppercorns to the jar(s).
