Ingredients

  • 6 medium tomatillos
  • 2 medium jalapeño peppers
  • 1 medium serrano pepper
  • 2 large garlic cloves
  • 0.5 medium white onion
  • 0.5 cup cilantro leaves
  • 1 tablespoon avocado oil
  • 1 large lime
  • 0.5 teaspoon sea salt
  • 2 tablespoons water

Directions

Step 1

Peel and rinse the tomatillos, removing any sticky residue.

Step 2

Preheat a skillet or griddle over medium heat (no oil needed).

Step 3

Place the tomatillos, jalapeños, serrano pepper, and garlic cloves onto the skillet. Allow them to char slightly, turning occasionally, for 8-10 minutes until the tomatillos are softened and the peppers and garlic are blistered.

Step 4

Roughly chop the charred jalapeños and serrano pepper, and remove the stems. For milder salsa, you can remove some or all of the seeds.

Step 5

Peel the charred garlic cloves and roughly chop the onion.

Step 6

In a blender or food processor, combine the charred tomatillos, peppers, garlic, onion, cilantro, avocado oil, juice of the lime, sea salt, and water. Blend until desired consistency is reached (smooth or slightly chunky).

Step 7

Taste the salsa and adjust seasoning if necessary. You can add more lime juice or salt to enhance the flavor.

Step 8

Allow the salsa to cool completely and serve fresh. It can be stored in an airtight container in the refrigerator for up to 4 days.
