Ingredients

  • 2 cups Full-fat coconut milk
  • 1 teaspoon Gelatin powder
  • 2 Probiotic capsules (dairy-free, live cultures)
  • 1 teaspoon Fresh lemon juice
  • 2 teaspoons Za'atar seasoning
  • 1 teaspoon Olive oil
  • 1 pinch Sea salt (optional)
  • 1 teaspoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Pour the full-fat coconut milk into a small saucepan and warm it over low heat until it’s hot but not boiling (approximately 180°F or 80°C).

Step 2

Sprinkle the gelatin powder evenly over the hot coconut milk. Stir thoroughly until the gelatin completely dissolves.

Step 3

Remove the saucepan from heat and allow the coconut milk mixture to cool to about 110°F (around body temperature).

Step 4

Open the probiotic capsules and gently stir the powder into the cooled coconut milk. Avoid vigorous mixing, as it may damage the live cultures.

Step 5

Add the fresh lemon juice to the milk, stirring until combined.

Step 6

Transfer the mixture into a clean glass container or jar. Cover loosely with a clean kitchen towel or plastic wrap to allow airflow.

Step 7

Place the jar in a warm spot (like inside an oven with the light on, or on a yogurt maker) and let it ferment for 12-24 hours, depending on your preferred tanginess level.

Step 8

After fermentation, stir the yogurt to combine any separation and transfer it to the refrigerator to chill for at least 4 hours.

Step 9

Once the yogurt is chilled and set, divide it into serving bowls. Drizzle each serving with olive oil and sprinkle with za'atar seasoning.

Step 10

Optionally, add a pinch of sea salt and garnish with fresh parsley for an extra layer of flavor. Serve immediately and enjoy your Paleo-friendly yogurt with za'atar!
