Ingredients

  • 2 cups Full-fat coconut milk
  • 1 tablespoon Gelatin powder
  • 2 tablespoons Raw honey
  • 2 capsules Probiotic powder (capsules or powder form)
  • 1.5 cups Frozen mixed berries (e.g., blueberries, raspberries, strawberries)
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Coconut sugar

Directions

Step 1

In a medium saucepan, heat the coconut milk over low to medium heat until it is warmed but not boiling.

Step 2

Sprinkle the gelatin powder over the warm coconut milk and whisk until it dissolves completely.

Step 3

Remove the saucepan from the heat and stir in 1 tablespoon of raw honey. Let the mixture cool to lukewarm temperature.

Step 4

Once the mixture is cooled, open the probiotic capsules and stir the powder into the mixture. Make sure the coconut milk is not too hot, as heat can damage the probiotics. Whisk until well combined.

Step 5

Transfer the yogurt mixture into a clean glass jar or bowl, cover lightly with a clean cloth or plastic wrap, and let it ferment at room temperature for 12-24 hours. The longer you leave it, the tangier the yogurt will taste.

Step 6

Once the yogurt has fermented to your liking, transfer it to the refrigerator to chill and thicken further.

Step 7

To prepare the berry sauce: In a small saucepan over medium heat, combine the frozen mixed berries, remaining 1 tablespoon of raw honey, lemon juice, and coconut sugar.

Step 8

Bring the mixture to a simmer and cook for 5-7 minutes, stirring frequently, until the berries have broken down and the sauce has slightly thickened. Remove from heat and let it cool.

Step 9

Serve the chilled coconut yogurt in bowls or jars, topped with the berry sauce. Optionally, garnish with fresh berries or a sprinkle of shredded coconut for added texture.
