Directions

Step 1

Begin by preparing the cauliflower rice. If using store-bought cauliflower rice, skip this step. Otherwise, pulse the florets of one medium cauliflower in a food processor until they resemble the texture of rice.

Lightly steam the cauliflower rice in a pan for 3-4 minutes over medium heat to make it tender, then let it cool completely.

Season the cooled cauliflower rice with a pinch of salt and a teaspoon of lemon juice. Mix well and set aside.
