Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Arrowroot starch
  • 2 tablespoons Ground flaxseed
  • 2 large Eggs
  • 2 tablespoons Olive oil
  • 1 teaspoon Apple cider vinegar
  • 0.5 teaspoons Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Sea salt
  • 0.75 cups Tomato sauce (Paleo-friendly, no added sugar)
  • 0.5 Zucchini
  • 0.5 Red bell pepper
  • 0.25 Red onion
  • 0.25 cups Olives
  • 1 cup Mushrooms
  • 2 tablespoons Fresh basil
  • 1 teaspoon Avocado oil (for greasing the pan)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or pizza stone with parchment paper and lightly grease it with 1 teaspoon of avocado oil.

Step 2

In a medium mixing bowl, combine the almond flour, arrowroot starch, ground flaxseed, garlic powder, dried oregano, and sea salt. Mix well.

Step 3

In a small bowl, whisk together the eggs, olive oil, and apple cider vinegar.

Step 4

Add the wet ingredients to the dry ingredients and mix until a dough forms. Knead lightly with your hands to ensure everything is evenly combined.

Step 5

Place the dough on the prepared parchment paper. Using your hands or a rolling pin, press the dough into a 10-inch circle or your desired pizza shape (about 1/4-inch thick).

Step 6

Bake the crust in the preheated oven for 10 minutes, or until it is firm and lightly golden.

Step 7

While the crust is baking, prepare the toppings. Thinly slice the zucchini, red bell pepper, red onion, and mushrooms.

Step 8

Remove the crust from the oven and spread the tomato sauce evenly over the surface.

Step 9

Arrange the sliced vegetables, olives, and mushrooms on top of the tomato sauce. Spread them evenly for consistent cooking.

Step 10

Return the pizza to the oven and bake for an additional 12-15 minutes, or until the vegetables are tender and slightly caramelized.

Step 11

Remove the pizza from the oven and let it cool for 2-3 minutes. Top with freshly chopped basil before slicing.

Step 12

Serve warm and enjoy your healthy Paleo Veggie Delight Pizza!
