Prepare your ingredients. Finely dice the carrot, zucchini, and bell pepper. Mince the garlic and thinly slice the green onions. If your sausage is uncooked, slice it into bite-sized pieces.
Heat 1 tablespoon of the cooking fat in a large skillet or wok over medium-high heat. Add the sausage and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of cooking fat. Add the minced garlic and cook for 30 seconds, until fragrant.
Add the diced carrot, zucchini, and bell pepper to the skillet. Sauté for 5-6 minutes, stirring occasionally, until the vegetables start to soften.
Push the vegetables to one side of the skillet and, if using, crack the eggs onto the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
Add the cauliflower rice to the skillet, along with the coconut aminos, salt, and black pepper. Stir well to combine everything.
Cook for another 3-4 minutes, stirring frequently, until the cauliflower rice is tender but not mushy.
Return the cooked sausage to the skillet and stir to evenly distribute it throughout the mixture. Cook for 1-2 more minutes to heat everything through.
Remove the skillet from the heat and taste for seasoning. Adjust with additional coconut aminos, salt, or pepper if needed.
