Ingredients

  • 1.5 cups almond flour
  • 0.5 cups tapioca flour
  • 2 tablespoons coconut flour
  • 2 tablespoons ground flaxseeds
  • 5 tablespoons water (for flax egg)
  • 0.25 cups coconut oil, melted
  • 1.5 cups plant-based sausage crumbles (Paleo-friendly)
  • 0.5 cups onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 1 tablespoon coconut aminos
  • 1 teaspoon dried sage
  • 0.5 teaspoons smoked paprika
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons unsweetened almond milk (for brushing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Prepare the flax egg by combining the ground flaxseeds with water. Let it sit for 10 minutes to thicken.

Step 3

In a large mixing bowl, combine almond flour, tapioca flour, coconut flour, and a pinch of salt. Add the melted coconut oil and stir until the mixture forms a dough. If the dough is too dry, add a small amount of water (1 teaspoon at a time) until it comes together.

Step 4

In a skillet over medium heat, add the plant-based sausage crumbles, chopped onion, and garlic. Sauté for 5 minutes until the onion is soft. Add nutritional yeast, coconut aminos, sage, smoked paprika, parsley, salt, and pepper. Mix well and cook for 2 more minutes. Remove from heat and let cool slightly.

Step 5

Place the dough between two sheets of parchment paper. Roll it out into a rectangle approximately 1/4-inch thick. Trim the edges to make it even.

Step 6

Spoon the sausage mixture down the center of the dough, leaving space on both sides. Carefully fold one side of the dough over the filling, then the other side. Pinch the seam to seal and gently flip the roll so the seam is on the bottom.

Step 7

Slice the roll into 6 equal pieces and arrange them on the prepared baking sheet. Brush the tops with almond milk for a golden finish.

Step 8

Bake for 20 minutes, or until the rolls are lightly golden. Allow to cool for 5 minutes before serving.
