  • 4 pieces Coconut flour tortillas

  • 2 tablespoons Lime juice (freshly squeezed)
  • 0.25 cup Red onion (finely diced)
  • 0.25 cup Cilantro (chopped)
  • 0.5 cup Cherry tomatoes (halved)
  • 0.5 cup Cucumber (diced)
  • 1 small Jalapeño (seeded and finely chopped, optional)
  • 2 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Place the coconut flour tortillas on a baking sheet and brush both sides lightly with 1 tablespoon of olive oil. Bake for 4–5 minutes, flipping halfway, until crisp and golden brown. Remove from the oven and set aside to cool.
