Ingredients

  • 300 grams water spinach (kangkung)
  • 2 tablespoons coconut oil
  • 4 cloves garlic
  • 2 medium shallots
  • 2 large red chili peppers
  • 1 tablespoon fish sauce
  • 1 teaspoon lime juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Thoroughly rinse the water spinach (kangkung) under running water to remove any dirt or debris. Trim off the tough ends and cut the stems and leaves into 4-5 cm (about 2 inch) pieces. Set aside.

Peel and thinly slice the garlic and shallots. Slice the red chili peppers diagonally into thin strips. If you prefer less spice, you can remove the seeds from the chili peppers.

In a large wok or skillet, heat the coconut oil over medium-high heat until it is hot but not smoking.
