Place a non-stick or heavy-bottomed pan over low heat. Add the almond flour and dry roast it for 5-7 minutes, stirring continuously to avoid burning. The flour should turn aromatic and slightly darker in color. Remove from heat when done.
In the same pan, melt the coconut oil over low heat. Once melted, add the roasted almond flour back into the pan and mix well, ensuring it's evenly coated with the coconut oil. Continue to cook for 3-4 minutes, stirring frequently.
Add the coconut sugar to the almond flour mixture, stirring thoroughly until well combined. Allow the sugar to melt slightly into the mixture, but do not let it burn. This should take about 2-3 minutes.
Sprinkle cardamom powder into the mixture and stir until evenly distributed. Remove the pan from heat and let the mixture cool until it is warm to the touch but not hot (to avoid burning your hands).
Once cooled, take a small portion of the mixture (about 2 tablespoons) in your hands and roll it into a smooth ball. Repeat until all the mixture is used up.
