Ingredients

  • 2 large green plantains
  • 4 tablespoons coconut oil
  • 0.5 teaspoons sea salt
  • 1 cup water
  • 0.25 teaspoons garlic powder (optional)

Directions

Step 1

Peel the green plantains by cutting off the ends and making a lengthwise slit through the skin without cutting into the flesh. Use your fingers or a spoon to pry off the skin.

Step 2

Slice the peeled plantains into 1-inch thick rounds.

Step 3

Heat 2 tablespoons of coconut oil in a large skillet over medium heat.

Step 4

Once the oil is hot, add the plantain slices in a single layer. Fry for about 2-3 minutes per side, or until they turn golden but are not completely cooked through.

Step 5

Remove the plantains from the skillet and place them on a clean cutting board. Use the back of a spatula or a small plate to gently flatten each slice to about 1/4-inch thick.

Step 6

In a small bowl, mix 1 cup of water with sea salt and garlic powder (if using). Dip the flattened plantains into the saltwater mixture briefly, but do not soak them.

Step 7

Add the remaining 2 tablespoons of coconut oil to the skillet and heat over medium-high heat. Once hot, return the flattened plantains to the skillet in batches, frying for 2-3 minutes on each side until crispy and golden brown.

Step 8

Transfer the fried tostones to a paper towel-lined plate to drain excess oil.

Step 9

Sprinkle with additional sea salt to taste and serve immediately with your favorite Paleo-friendly dipping sauce or alongside a main dish.
