Ingredients

  • 1 cup Almond flour
  • 0.25 cup Tapioca flour (or arrowroot powder)
  • 2 tablespoons Coconut flour
  • 0.5 teaspoon Sea salt
  • 2 large Eggs
  • 0.5 cup Water
  • 1 tablespoon Olive oil (or avocado oil)

Directions

Step 1

In a medium mixing bowl, combine almond flour, tapioca flour, coconut flour, and sea salt. Whisk together until evenly mixed.

Step 2

In a separate bowl, whisk the eggs until beaten, then add the water and olive oil. Mix well.

Step 3

Slowly pour the wet ingredients into the dry ingredients, whisking continuously to form a smooth, thin batter. Make sure there are no lumps.

Step 4

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a small amount of olive oil or avocado oil.

Pour about 1/4 cup of batter into the center of the pan, immediately swirling it around to spread the batter into a thin circle.
