Ingredients

  • 6 medium (about 1 pound) Tomatillos
  • 2 large Green chilies (such as Anaheim or poblano)
  • 1 medium Jalapeño
  • 3 whole Garlic cloves
  • 1 cup (loosely packed) Cilantro leaves
  • 1 small, chopped Red onion
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon (or to taste) Sea salt
  • 0.5 teaspoon (or to taste) Black pepper

Directions

Step 1

Preheat the oven to 425°F (220°C).

Remove the husks from the tomatillos and rinse to remove any sticky residue. Cut the tomatillos in half and place them on a baking sheet.

Add the green chilies, jalapeño, and garlic cloves (leave the garlic cloves unpeeled) to the baking sheet with the tomatillos.

Drizzle the vegetables with olive oil and roast in the oven for 12-15 minutes or until the tomatillos are soft and slightly charred, and the chilies have blistered skins.

Remove the baking sheet from the oven and let the ingredients cool slightly. Once cool enough to handle, peel the garlic cloves and discard the skins.

Place the roasted tomatillos, chilies (remove stems and seeds for milder salsa), peeled garlic, cilantro, lime juice, red onion, sea salt, and black pepper in a blender or food processor.
