Ingredients

  • 2 lbs pork belly
  • 1 cup coconut aminos
  • 3 tbsp coconut sugar
  • 4 cloves garlic, minced
  • 2 shallots, minced
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 2 tbsp avocado oil
  • 2 cups water
  • 1 cup coconut water
  • 6 pasture-raised eggs, hard-boiled and peeled
  • 2 green onions, sliced (optional garnish)
  • 2 red chilies, sliced (optional garnish)

Directions

Step 1

Cut the pork belly into 1 1/2-inch cubes. Set aside.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the avocado oil over medium heat.

Step 3

Add the minced garlic and shallots to the pot. Sauté for 2-3 minutes until fragrant and softened.

Step 4

Sprinkle in the coconut sugar and stir until it melts and begins to caramelize, turning a deep amber color, about 2 minutes.

Step 5

Add the pork belly to the pot and stir to coat the meat in the caramelized mixture. Cook for 5-7 minutes, allowing the pork to brown slightly.
