Cut the pork belly into 1 1/2-inch cubes. Set aside.
In a large Dutch oven or heavy-bottomed pot, heat the avocado oil over medium heat.
Add the minced garlic and shallots to the pot. Sauté for 2-3 minutes until fragrant and softened.
Sprinkle in the coconut sugar and stir until it melts and begins to caramelize, turning a deep amber color, about 2 minutes.
Add the pork belly to the pot and stir to coat the meat in the caramelized mixture. Cook for 5-7 minutes, allowing the pork to brown slightly.
Pour in the coconut aminos, water, and coconut water. Add the salt and black pepper, then stir to combine.
Bring the pot to a boil, then reduce the heat to low. Cover the pot and let the pork simmer for 60-90 minutes, stirring occasionally.
After the first hour, add the hard-boiled eggs to the pot and continue simmering for an additional 30 minutes. The eggs will absorb the flavor of the sauce.
Taste and adjust the seasoning with additional coconut aminos or salt if needed.
Before serving, optionally garnish the dish with sliced green onions and red chilies for added flavor and presentation.
Serve the Paleo Thit Kho hot over cauliflower rice or alongside steamed vegetables for a complete Paleo-friendly meal.
