Prep Time:10 mins

Total Time:25 mins
Servings: 2

Ingredients

  • 4 pieces large eggs
  • 3 tablespoons coconut oil
  • 2 pieces shallots
  • 2 pieces garlic cloves
  • 1 piece red chili
  • 0.5 teaspoons ground turmeric
  • 0.5 teaspoons sea salt
  • 1 teaspoons fresh lime juice
  • 2 tablespoons fresh cilantro (optional, for garnish)

Directions

Step 1

Peel and thinly slice the shallots and garlic cloves. Slice the red chili thinly (adjust to taste if you prefer less heat).

Step 2

In a medium skillet, heat the coconut oil over medium heat until shimmering.

Step 3

Add the sliced shallots, garlic, and red chili to the skillet. Sauté for 2-3 minutes until fragrant and slightly golden.

Step 4

Sprinkle the ground turmeric and sea salt over the sautéed aromatics, stirring to combine evenly.

Step 5

Using a spoon, move the aromatics to the edges of the skillet to create space in the center.

Step 6

Crack the eggs gently into the skillet, one by one, ensuring the yolks remain intact. Fry the eggs sunny-side-up for 3-4 minutes or until the whites are set but the yolks are still runny.

Step 7

Drizzle fresh lime juice over the eggs just before removing them from the skillet.

Step 8

Transfer the eggs and sautéed aromatics onto a serving plate.

Step 9

Garnish with freshly chopped cilantro, if desired. Serve immediately, either on its own or with cauliflower rice for a complete Paleo meal.
