Ingredients

  • 1 cup Tamarind pulp (seedless)
  • 2 cups Water
  • 8 pieces Medjool dates (pitted)
  • 2 tablespoons Coconut sugar
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 0.25 teaspoon Sea salt

Directions

Step 1

Place the tamarind pulp and water in a medium saucepan over medium heat.

Step 2

Cook for 5–7 minutes, stirring occasionally, until the tamarind pulp softens and starts to break down.

Step 3

Add the pitted Medjool dates to the saucepan and continue cooking for another 5 minutes to allow the dates to soften.

Step 4

Remove the saucepan from the heat and let the mixture cool slightly.

Step 5

Transfer the tamarind-date mixture to a blender and blend until smooth. Add small amounts of additional water if the consistency is too thick.

Step 6

Strain the blended mixture through a fine mesh sieve to remove fibrous material, if desired.

Step 7

Pour the strained mixture back into the saucepan and return to low heat.

Step 8

Mix in the coconut sugar, ground cumin, ground ginger, cayenne pepper (if using), and sea salt. Stir well to combine.

Simmer for 3–5 minutes, stirring occasionally, to allow the flavors to meld and the chutney to thicken slightly.

Remove from heat and let the chutney cool completely before serving. Store any leftovers in an airtight container in the refrigerator for up to 1 week.
