  • 2 cups romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 whole avocado, sliced
  • 1 whole lime, cut into wedges
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole avocado
  • 2 tablespoons lime juice
  • 1 tablespoon extra-virgin olive oil
  • 0.5 teaspoon garlic powder
  • 1 tablespoon water
  • 0.25 teaspoon sea salt, for dressing

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and minced garlic, and sauté for 2-3 minutes until the onion is translucent.

Step 3

Add the ground beef or turkey to the skillet. Cook, breaking up the meat with a wooden spoon, until it is browned, about 5-7 minutes.

Step 4

Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to coat the meat in the spices, then turn off the heat and set aside.

In a separate skillet, cook the cauliflower rice over medium heat for 5 minutes to soften, stirring occasionally. Alternatively, microwave the cauliflower rice in a safe container for 3-4 minutes until tender.
