Ingredients

  • 1 piece Cauliflower head (medium, riced)
  • 2 cups Fresh parsley (finely chopped)
  • 0.5 cups Fresh mint leaves (finely chopped)
  • 2 medium pieces Tomatoes (diced)
  • 1 medium piece Cucumber (diced)
  • 3 pieces Green onions (thinly sliced)
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 3 tablespoons Olive oil (extra virgin)
  • 0.5 teaspoons Sea salt
  • 0.25 teaspoons Black pepper (freshly ground)

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until it resembles the texture of rice. Alternatively, use pre-riced cauliflower.

Step 2

Transfer the riced cauliflower to a large mixing bowl.

Step 3

Finely chop the parsley and mint leaves. Add them to the bowl with the cauliflower rice.

Dice the tomatoes and cucumber, and thinly slice the green onions. Add them to the mixture in the bowl.
