  • 1 small red onion
  • 2 celery stalks
  • 4 slices cooked, crumbled bacon
  • 2 tablespoons fresh parsley
  • 2 teaspoons dijon mustard
  • 2 tablespoons apple cider vinegar
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel the sweet potatoes and chop them into 1-inch cubes. Spread the cubes in an even layer on the prepared baking sheet.

Step 3

Drizzle the sweet potato cubes with 2 tablespoons of olive oil, sprinkle with sea salt and black pepper, and toss to coat evenly.

Step 4

Roast the sweet potatoes in the oven for 20-25 minutes, flipping halfway through, until they are tender and lightly browned.

Step 5

While the sweet potatoes are roasting, finely dice the red onion and celery, and chop the fresh parsley.

Step 6

Once the sweet potatoes are ready, remove them from the oven and let them cool slightly for 5-7 minutes.

Step 7

In a large mixing bowl, combine the roasted sweet potatoes, diced red onion, diced celery, and crumbled bacon.

Step 8

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, dijon mustard, garlic powder, and chopped parsley to create the dressing.

Step 9

Pour the dressing over the sweet potato mixture and gently toss until everything is well coated.
