Ingredients

  • 4 medium-sized sweet potatoes
  • 0.5 cup coconut milk
  • 2 tablespoons ghee
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon sea salt
  • 0.125 teaspoon black pepper (optional)

Directions

Step 1

Peel the sweet potatoes and cut them into 1-inch cubes for faster cooking.

Step 2

Fill a medium-sized pot with water and bring it to a boil over medium heat.

Step 3

Add the cubed sweet potatoes to the boiling water and cook for 15-20 minutes, or until they are fork-tender.

Step 4

Drain the sweet potatoes and transfer them to a blender or food processor.

Step 5

Add coconut milk, ghee, ground cinnamon, sea salt, and black pepper (if using) to the blender with the sweet potatoes.

Step 6

Blend until smooth and creamy, stopping to scrape down the sides as needed. Adjust the consistency by adding a little more coconut milk if the puree is too thick.

Step 7

Taste the puree and adjust seasonings if necessary, adding more salt or cinnamon to your preference.

Step 8

Transfer the sweet potato puree to a serving dish and serve warm. Enjoy!
