Ingredients

  • 1 cup Sweet potato (cooked and mashed)
  • 1 cup Almond butter
  • 1/3 cup Cocoa powder (unsweetened)
  • 1/4 cup Maple syrup
  • 2 tablespoons Coconut flour
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/4 cup Dark chocolate chips (Paleo-friendly, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper or lightly grease it with coconut oil.

Step 2

In a large mixing bowl, combine the cooked and mashed sweet potato, almond butter, eggs, maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.

Step 3

In a separate bowl, whisk together the cocoa powder, coconut flour, baking soda, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until everything is fully mixed. The batter will be thick.

Step 5

Fold in the dark chocolate chips if you're using them.

Step 6

Transfer the batter to the prepared baking dish and spread it out evenly using a spatula.

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).

Step 8

Remove the brownies from the oven and allow them to cool completely in the pan before slicing into 9 squares.

Step 9

Serve and enjoy! Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer storage.
