Ingredients

  • 4 large (about 2 pounds) red onions
  • 2 tablespoons coconut oil
  • 1 cup balsamic vinegar (check for paleo compliance)
  • 3 tablespoons honey (raw, unfiltered)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Directions

Step 1

Peel and thinly slice the red onions into half-moons.

Step 2

Heat a large skillet or sauté pan over medium heat and add the coconut oil. Once melted, add the sliced onions.

Step 3

Sauté the onions for 10-15 minutes, stirring often, until they start to soften and caramelize.

Step 4

Reduce the heat to low, then stir in the balsamic vinegar, honey, apple cider vinegar, salt, and black pepper. Add fresh thyme leaves if using.

Step 5

Continue to cook the mixture on low heat, stirring occasionally, for another 30 minutes until the onions are fully caramelized and the liquid reduces into a thick, jam-like consistency.

Step 6

Taste and adjust the seasonings if needed. Add an extra pinch of salt or a drizzle of honey for balance, based on your preference.

Step 7

Remove the skillet from the heat and let the onion jam cool slightly.

Step 8

Transfer the onion jam to a glass jar or airtight container. Store in the refrigerator for up to 2 weeks.

Step 9

Serve warm or at room temperature as a topping for meats, roasted vegetables, or paleo-friendly crackers.
