Ingredients

  • 2 cups Raw mixed nuts (e.g., almonds, pecans, walnuts, cashews)
  • 1 quarter cup Coconut sugar
  • 2 tablespoons Raw honey
  • 1 tablespoon Coconut oil
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cayenne pepper
  • 0.5 teaspoon Sea salt
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the raw mixed nuts and set aside.

Step 3

In a small saucepan, melt the coconut oil over low heat. Add the coconut sugar, raw honey, ground cinnamon, cayenne pepper, sea salt, and vanilla extract. Stir continuously until the mixture is smooth and begins to bubble slightly, about 2 minutes.

Step 4

Pour the warm spiced mixture over the nuts in the mixing bowl. Stir well to ensure all the nuts are evenly coated.

Step 5

Spread the coated nuts in a single layer on the prepared baking sheet.

Step 6

Bake in the preheated oven for 12-15 minutes, stirring halfway through to prevent burning and to ensure even caramelization.

Step 7

Remove the nuts from the oven and let them cool completely on the baking sheet (they will harden as they cool).

Step 8

Once cooled, break the nuts apart if they have clumped together. Transfer to an airtight container for storage or serve immediately.
