  • 1 cut into wedges, for garnish (optional) lime

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the plantains and cut a shallow slit lengthwise down each plantain, being careful not to cut them all the way through.

Step 3

Brush the plantains lightly with 1 tablespoon of olive oil and place them on a baking sheet lined with parchment paper.

Bake the plantains in the preheated oven for 20 minutes, flipping them halfway through cooking, until they are tender and golden brown.

While the plantains are baking, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.

Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened.
