Ingredients

  • 1 head Green cabbage
  • 1 pound Ground beef
  • 0.5 pound Ground pork
  • 1 cup Cauliflower rice
  • 1 medium Onion
  • 3 Garlic cloves
  • 0.25 cup Fresh parsley
  • 1 Egg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 2 cups Canned crushed tomatoes
  • 1 cup Chicken broth
  • 2 tablespoons Olive oil

Directions

Step 1

Bring a large pot of water to a boil. Carefully remove 12 large outer leaves from the head of cabbage. Rinse and blanch the cabbage leaves in boiling water for 3-4 minutes until softened. Remove the leaves and set aside to cool.

Step 2

Finely dice the onion and mince the garlic. In a mixing bowl, combine the ground beef, ground pork, cauliflower rice, onion, garlic, parsley, egg, salt, black pepper, and smoked paprika. Mix well until fully combined.

Step 3

Lay a cabbage leaf flat on a clean surface. Place 2-3 tablespoons of the meat mixture onto the center of the leaf. Roll the cabbage leaf tightly around the filling, tucking in the sides as you go to create a secure roll. Repeat with the remaining leaves and filling.

Step 4

Heat olive oil in a large skillet or Dutch oven over medium heat. Arrange the cabbage rolls seam-side down in the pan. Cook for 2-3 minutes to lightly brown the rolls.

Pour the crushed tomatoes and chicken broth evenly over the cabbage rolls. Bring the liquid to a gentle simmer. Cover the skillet or Dutch oven with a lid and reduce the heat to low.

Simmer the cabbage rolls for 45-50 minutes, occasionally spooning the tomato sauce over the rolls to keep them moist.
