Ingredients

  • 2 cups Fresh strawberries
  • 1 13.5-ounce can Full-fat coconut milk (chilled overnight)
  • 3 tablespoons Raw honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1.5 teaspoons Gelatin powder
  • 2 tablespoons Water

Directions

Step 1

Chill your can of coconut milk in the refrigerator overnight to allow the cream to separate from the liquid.

Step 2

Wash and hull the strawberries, then puree them in a blender until smooth. Set aside.

Step 3

In a small bowl, combine the gelatin powder with water. Let it sit for 2-3 minutes to bloom.

Step 4

Heat the bloomed gelatin mixture over low heat until it dissolves completely, then immediately stir it into the strawberry puree.

Step 5

Scoop the solidified cream from the top of the chilled coconut milk can into a mixing bowl, discarding the liquid (or saving it for another use).

Step 6

Using an electric hand mixer or whisk, beat the coconut cream until fluffy and smooth.

Step 7

Add the strawberry-gelatin mixture, raw honey or maple syrup, and vanilla extract to the whipped coconut cream. Gently fold the ingredients together until well combined.

Divide the mousse evenly into 4 serving glasses or bowls, then refrigerate for at least 2 hours to set.
