  • 400 grams water spinach (kangkong)
  • 3 large garlic cloves
  • 2 tablespoons coconut oil
  • 1.5 tablespoons fish sauce
  • 1 unit fresh red chili (optional, for heat)
  • 1 teaspoon fresh lime juice

Directions

Step 1

Thoroughly rinse the water spinach under cold water to remove dirt or grit. Trim the tough lower stems and discard. Chop the remaining stems and leaves into 2-3 inch pieces, keeping the stems and leaves separated for even cooking.

Peel and finely chop the garlic cloves. If using red chili, slice it thinly.

Heat a large skillet or wok over medium-high heat. Add the coconut oil and swirl to coat the surface.
