Thinly slice the pork tenderloin into bite-sized strips against the grain. Place the pork in a mixing bowl and toss with 1 tablespoon of coconut aminos. Set aside to marinate while preparing the vegetables.
Mince the garlic and fresh ginger. Slice the carrots into thin rounds, cut the broccoli into small florets, julienne the bell pepper, and dice the zucchini. Chop the green onions into 1-inch pieces.
