Ingredients

  • 450 g beef sirloin
  • 2 green bell peppers
  • 3 tbsp coconut aminos
  • 1 tbsp arrowroot powder
  • 3 garlic cloves
  • 1 tsp ginger
  • 2 tbsp avocado oil
  • 1 tsp sesame oil (optional, Paleo compliant)
  • 1 tsp red chili flakes (optional)
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Directions

Step 1

Thinly slice the beef sirloin against the grain into bite-sized strips and place in a bowl.

Step 2

In a small bowl, mix 1 tablespoon of coconut aminos with the arrowroot powder to form a slurry. Pour the mixture over the beef strips and toss to evenly coat. Set aside to marinate for 10 minutes.

Step 3

Slice the green bell peppers into thin strips. Peel and mince the garlic cloves. Grate or finely mince the ginger.

Step 4

Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Once hot, add the beef strips in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 1-2 minutes on each side until browned but not fully cooked through. Remove the beef from the pan and set aside.

Add the remaining 1 tablespoon of avocado oil to the skillet. Toss in the minced garlic and ginger, stirring for 30 seconds until fragrant.
