Ingredients

  • 1 cup Coconut flour
  • 1 cup Tapioca starch
  • 0.5 teaspoon Salt
  • 0.75 cup Boiling water
  • 0.5 pound Ground chicken or turkey
  • 0.5 cup Shredded cabbage
  • 1 medium Carrot, grated
  • 2 stalks Green onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Coconut aminos
  • 1 teaspoon Sesame oil (optional)
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Cooking oil (for greasing steamer)

Directions

Step 1

In a mixing bowl, combine the coconut flour, tapioca starch, and salt.

Step 2

Gradually add boiling water to the flour mixture while stirring with a spoon. Once it begins to cool slightly, knead the dough with your hands until smooth and pliable. Cover with a damp cloth and set aside.

Step 3

In another bowl, mix the ground chicken or turkey, shredded cabbage, grated carrot, chopped green onion, minced garlic, grated ginger, coconut aminos, sesame oil (if using), and black pepper. Combine well to form the filling.

Step 4

Divide the dough into small, equal-sized balls (about 12-15 balls). Roll each ball into a thin circular wrapper using a rolling pin, keeping the edges slightly thinner than the center.

Step 5

Place a spoonful of the filling in the center of each wrapper. Fold the wrapper over the filling and pinch the edges together to seal. Pleat the edges for a traditional momo shape, if desired.

Step 6

Grease a steamer basket lightly with oil to prevent sticking. Place the momos in the steamer, ensuring they don't touch each other.

Step 7

Bring water to a boil in the steamer pot. Place the steamer basket over the pot, cover with a lid, and steam the momos for 10-12 minutes, or until the filling is cooked through and the wrappers are firm.

Step 8

Serve hot with a Paleo-friendly dipping sauce, such as a spicy tomato or coconut-based chutney.
