Ingredients

  • 5 cups fresh spinach
  • 1 cup coconut milk (full-fat)
  • 1 medium onion
  • 3 cloves garlic cloves
  • 3 tablespoons olive oil
  • 1 cup cherry tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.5 cup vegetable broth (or water)

Directions

Step 1

Wash the fresh spinach thoroughly under running water. Drain excess water and set aside.

Step 2

Peel and finely dice the onion. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 4

Add the diced onion to the skillet and sauté for 3-4 minutes until translucent.

Step 5

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Add the cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to break down and release their juices.

Step 7

Stir in the ground cumin, smoked paprika, sea salt, and black pepper. Mix well to coat the vegetables in the spices.

Step 8

Reduce the heat to medium-low. Add the fresh spinach to the skillet a handful at a time, stirring frequently, until it wilts and fits into the pan.

Step 9

Pour in the coconut milk and vegetable broth (or water) and stir to combine. Bring the mixture to a gentle simmer.

Step 10

Allow the sauce to cook for 5-7 minutes, stirring occasionally, until the spinach is soft and the sauce thickens slightly.

Step 11

Remove the skillet from heat. Stir in lemon juice for a burst of freshness.

Step 12

Taste and adjust seasoning, if needed, adding more salt or pepper to preference.

Step 13

Serve the stewed spinach sauce warm over cooked vegetables, grilled meat, or use as a dip. Enjoy!
