Ingredients

  • 6 cups fresh spinach
  • 1 medium onion
  • 2 large garlic cloves
  • 1 cup almond flour
  • 3 large eggs
  • 2 tablespoons coconut oil
  • 3 tablespoons fresh parsley
  • 1 teaspoon sea salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons nutritional yeast (optional)

Directions

Step 1

Rinse the fresh spinach thoroughly and remove any tough stems.

Step 2

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the spinach and sauté for 2-3 minutes until wilted. Remove the spinach from the skillet and allow it to cool slightly.

Step 3

Finely chop the onion, garlic, and parsley. Set aside.

Step 4

Once the spinach has cooled, carefully squeeze out excess liquid using your hands or a clean kitchen towel. Finely chop the spinach and place it in a mixing bowl.

Step 5

Add the chopped onion, garlic, parsley, almond flour, eggs, sea salt, black pepper, and optional nutritional yeast to the bowl with the spinach. Mix well until a cohesive mixture forms.

Step 6

Using your hands, form the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.

Step 7

Heat the remaining tablespoon of coconut oil in a skillet over medium heat. Place the patties in the skillet, being careful not to overcrowd them. Cook for 3-4 minutes per side, or until golden brown.

Step 8

Transfer the cooked patties to a plate lined with paper towels to drain any excess oil. Continue cooking the patties in batches until all are done.
