Ingredients

  • 4 cups Baby spinach
  • 3 cups Kale
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 medium Red onion
  • 1 large Avocado
  • 0.25 cup Raw almonds
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 1 clove Garlic
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Thoroughly wash the baby spinach and kale. Pat dry with a clean kitchen towel or use a salad spinner.

Step 2

Tear the kale leaves into bite-sized pieces and discard the thick stems.

Step 3

Slice the cherry tomatoes in half and dice the cucumber into half-moons. Thinly slice the red onion.

Cut the avocado into cubes and set aside.
