Ingredients

  • 2 large eggs
  • 1 tablespoon cooking fat (ghee, coconut oil, or avocado oil)
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 teaspoon fresh parsley (optional, for garnish)

Directions

Step 1

Place a non-stick or cast-iron skillet over medium heat. Add the cooking fat (ghee, coconut oil, or avocado oil) and allow it to melt and evenly coat the surface of the pan.

Step 2

Crack the eggs into a small bowl to ensure there are no shells, then gently slide the eggs into the skillet, taking care not to break the yolks.

Step 3

Reduce the heat to medium-low. Allow the eggs to cook undisturbed for 2-3 minutes until the whites start to set but remain slightly translucent on the surface.

Step 4

If you prefer sunny-side-up eggs, cover the skillet with a lid and cook for another 1-2 minutes until the whites are fully set but the yolks remain runny. For over-easy eggs, carefully flip each egg with a spatula and cook for another 30 seconds.

Step 5

Season the eggs with a pinch of sea salt and black pepper to taste.

Step 6

Transfer the eggs to a plate. Garnish with freshly chopped parsley, if desired, and serve immediately.
