Ingredients

  • 1 lb pork loin (thinly sliced)
  • 3 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 tsp crushed red pepper flakes
  • 1 tbsp arrowroot powder
  • 2 tbsp water
  • 2 cups broccoli florets
  • 1 cup carrot (julienned)
  • 1 medium red bell pepper (sliced)
  • 2 stalks green onions (sliced)
  • 2 tbsp avocado oil
  • 1 medium lime (juiced)

Directions

Step 1

In a small bowl, mix coconut aminos, sesame oil, minced garlic, grated ginger, and crushed red pepper flakes. Set aside this marinade.

Step 2

In another small bowl, whisk together arrowroot powder and water to make a slurry. Set aside.

Step 3

Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.

Step 4

Add the sliced pork loin and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove the pork from the skillet and set aside.

Step 5

In the same skillet, heat the remaining 1 tablespoon of avocado oil. Add broccoli florets, julienned carrot, and sliced red bell pepper. Stir-fry the vegetables for 4-5 minutes until they are tender-crisp.

Step 6

Return the cooked pork to the skillet with the stir-fried vegetables. Pour the marinade over the mixture and stir to coat evenly.

Step 7

Stir the arrowroot slurry into the skillet to thicken the sauce, cooking for 1-2 minutes until the sauce becomes glossy.

Step 8

Turn off the heat and squeeze the juice of a lime over the stir-fry. Sprinkle sliced green onions on top as a garnish.
